| The project involved the radical reorganisation of the vast service area of the Palace including the Royal Kitchen. The kitchens were entirely redesigned and re-equipped with stainless steel equipment, while air conditioning was introduced by incorporating a ventilated ceiling covering the entire kitchen area. The Royal Kitchen is not only responsible for catering for the Royal family but for the four thousand people the Queen entertains annually, while also providing meals for the four hundred palace staff.
In order to provide cooling for the kitchens and for the galleries, a borehole was sunk to draw cool water from the aquafer below, supplying a green ecologically friendly solution to provide cooling for both the kitchens and the main gallery spaces.
